So here is the first recipe of the blog!
I decided that I wanted to try something really easy since it was a last minute decision at 8AM this morning. I totally forgot to take pictures as I was prepping the meal. Note for next time!
Chicken & Stuffing- Crockin' Style
Ingredients:
6 whole boneless skinless chicken breasts
1 box stove top stuffing mix
1 can 98% fat-free cream of chicken soup (or any cream soup)
1/2 cup water (or chicken broth)
Directions:
1. Spray the slow cooker with cooking spray (if you have a non-stick insert, you can skip this).
2. Add the chicken breasts to the bottom of the slow cooker. Don't worry if the overlap.
3. Mix the stuffing, the chicken soup, and water (or chicken broth) in a separate bowl until combined.
4. Spread the mixture over the chicken.
5. Cook on low for 6-8 hours.
Review:
For a simple recipe, it was easy and pretty tasty! The chicken was very tender and the stuffing was moist. I cooked mine for 8 hours and then it was on warm for almost another 2.
Dan and Grace seemed to enjoy it. We had it with some frozen mixed veggies.
One thing I might change is the amount of stuffing that was with the chicken. Next time I might double the amount of stuffing, chicken soup, and water. I did not use chicken broth this time so I might the next time around to see if there is a difference in the taste.
Overall, it was a winner! It made enough for us to have leftovers tomorrow night!

Crock On!!!
This AWESOME Crock Pot has an insert that you can put on the stove top so that you can brown the meat before you cook it. I am not into the whole browning of the meat/chicken. I just toss the meat in there and it is good to go.
It has a timer that you can set on Low, High, High/Low, and Warm. The setting intervals are 4, 6,8, and 10 hours. After the time expires that you have indicated, it will automatically switch to the Warm setting and keeps a timer on that.
I tried it for the first time right after Mother's Day and I love it.
What I am planning on sharing in this blog is the recipes, step by step, photos of the directions, and a family review of the recipe!
The recipes I am going to be sharing are not of my creation. They are recipes that I have found and tried or are interested in trying!
I will be doing breakfast, appetizers, soup, stews, dips, chicken, meat, Italian, desserts, and so many more!
I am really excited to start this and for people to try them out and give some feedback! I would love to know of tweaks and changes any of you make!
